Poached Pears recipe

Ingredients:

4 pears, peeled and cored.
4 cups of water.
2 cups of sugar.
2 cups of white wine.
1 vanilla bean.
1 tablespoon of lemon juice, plus extra to prevent pears browning.

Preparation Instructions:

In a suitably sized saucepan, combine the wine, water, vanilla bean and lemon juice.

Simmer for 5 minutes.

Add the peeled and cored pears to the poaching liquid and poach for 8 minutes.

Remove the pears and continue to reduce sauce by one-half to one-third.

Plate pears and pour reduced sauce around each one.
