Pear, Potato, and Red Onion Gratin recipe
This gratin, a cheesy vegetable bake, takes traditional potatoes to a new level with the addition of red onions and thinly sliced pears. Swiss cheese rounds out the flavor of the dish with a slightly savory, tangy note.
Ingredients:
4 medium Yukon Gold potatoes, very thinly sliced
2 pears, cored and very thinly sliced
1 red onion, very thinly sliced
1 tablespoon butter
½ pound shredded Swiss cheese
¼ pound grated Parmesan cheese
1 1/2 cups heavy cream
1/2 teaspoon cayenne pepper
2 teaspoons freshly ground black pepper
Directions:
1. Preheat the oven to 350°F. Butter the bottom and sides of a medium gratin dish.
2. Put a single layer of overlapping potato slices on the bottom of the gratin dish. Top with a single overlapping layer of pear slices, then onion slices, then with 1/4 of the cheese, cream, cayenne and black pepper. Repeat 3 more times, topping with a layer of cheese, cream, cayenne and pepper.
