Pear Ice Cream recipe

A tabletop ice cream maker allows you to craft artisanal ice creams easily in the comfort of your home. This smooth vanilla-pear version tastes wonderful served on its own or over a cup of fresh berries.


1 ½ cups whipping cream, divided
¾ cup sugar
4 medium egg yolks, lightly beaten
½ teaspoon vanilla
1 tablespoon pear liqueur, optional
1 ½ pounds ripe pears, peeled, cored, chopped
¼ cup water


1. Combine 1 cup whipping cream and sugar in a small pot; cook over low heat until sugar dissolves, stirring. Whisking constantly, slowly pour the mixture over egg yolks in a medium bowl.

2. Return the mixture to the saucepan and cook over medium-low heat for 12 minutes, or just until mixture coats the back of a spoon. Stir in remaining ½ cup whipping cream, vanilla, and pear liqueur.

3. In another medium pot, combine pears with water; cook over medium heat 5 minutes, or until heated through.

4. Transfer pears and cooking liquid to a food processor or blender; puree until smooth.

5. Stir pear puree into pot of whipping cream mixture, cover, and refrigerate until chilled.

6. Freeze mixture in ice-cream maker according to the manufacturer's directions.
