Leek and Pear Soup recipe
Pears in soup? Absolutely. Sweet, creamy, and tenderly comforting, this dish is pure luxury in a bowl.
Ingredients:
2 leeks
1 tablespoon unsalted butter
1 medium onion, peeled, chopped
2 pears, peeled, chopped
2 medium potatoes, peeled, chopped
4 cups chicken stock
½ cup cream
Salt and pepper, to taste
Cream
Chopped fresh chives, to garnish
Directions:
1. Remove the dark outer leaves from the leeks and discard. Wash well to remove any dirt from between layers and chop finely.
2. Heat butter in a large pot over medium-low. Add leeks and onions; cook until softened, 5 minutes.
3. Add pears, potatoes, and stock; bring to a boil over high heat, reduce to a simmer, and cook 30 minutes, until potatoes are tender.
4. Transfer mixture to a blender and puree until smooth; transfer back to pot and add cream, salt, and pepper. Heat over low until warmed through and serve topped with chives.
